Bison Barbeque Meatballs
submitted by:
3 lbs ground buffalo burger
 5 oz evaporated milk
 2 c. bread crumbs
 1/2 tsp pepper
 2 tsp chili powder
 1/2 tsp garlic powder
 2-1/2 tsp salt
 2 eggs
 1/2 c. chopped onions
2 c ketchup
1 1/2 c brown sugar
1/2 tsp garlic powder
1/2 c chopped onions
1 tsp liquid smoke (optional)
Mix meatball ingredients together and shape into small balls. Place in a baking pan in a single layer. Combine the sauce ingredients and pour over the meatballs. (This sauce keeps well in the refrigerator if you don't use all of it.) Bake at 350 degrees for 1 hour.
Bison Meatloaf

1- 1/2 lb ground buffalo burger
2/3 c. dried bread crumbs or crackers
1 c. milk
2 eggs
1/4 c. grated onion
1 tsp salt
1/2 tsp pepper
1/2 tsp sage
3 tbsp brown sugar
1/4 c ketchup
1/4 tsp nutmeg
1 tsp dry mustard
Mix meatloaf ingredients together and shape into loaf. Place in a bread pan. Combine the sauce ingredients and pour over the meatloaf. Bake at 350 degrees for 60 - 70 minutes.
Bison Sloppy Joes

1 lb ground buffalo burger
1/4 c. chopped onions
1 c ketsup
1/2 c bread crumbs
1/2 c milk
1 tsp salt
1/4 tsp pepper
1 tsp worchestershire sauce
2 tbsp vinegar
2 tbsp sugar
Brown ground buffalo burger and chopped onions. Add rest of ingredients and mix thouroughly.  Cook until heated thouroughly. Simmer for an additional 15 minutes. Serve on hamburger bun with optional cheese slice.
(note- if doubling recipe cut back on vinegar)
This is my choice of meals to bring to someone in need of a break. I make it on the stove then transfer to a crockpot before delivering with a package or two of hamburger buns. I have also learned to include a copy of the recipe. Kids loves this easy recipe just as much as adults.
Bison Bread and Butter Roast

3 - 5 lb Buffalo Bread and Butter Roast
        (any type of roast will do, I prefer Bread and Butter)
1 large can beef  broth
Buffalo meat has a great taste - you don't have to smother it with alot of different flavors. Try it simple first, before adding alot of other ingredients and enjoy America's Original Red Meat!
I love my roasts to fall apart (shredded) so this is my recipe-
I put a frozen buffalo roast and a large can of beef broth in the crockpot the night before on low and let it cook through the night and all day. For anyone looking to cook a thawed roast just put it in the crockpot the morning of and let it cook all day long (again on low). 
Leftovers work great for soups and stews, you already have a great base with both the broth and the meat!
Always remember low and slow with buffalo meat!
Buffalo Burger Chowmein Hot Dish

1 (8oz) pkg of egg noodles
1-1/2 lb ground buffalo burger
1/2 c finely chopped onion
2 cans cream of mushroom soup
1-1/2 c milk
1-1/3 c diced Velvetta Cheese
3/4 c chopped stuffed olives
1/2 tsp pepper
1/2 pkg of chow mein noodles
1 can of mushroom pcs (optional)
Cook pkg of egg noodles as directed and drain. Leave noodles in drainer and use pan to brown buffalo burger with onion. Add cooked noodles, cream of mushroom soup, milk, diced Velvetta cheese, chopped stuffed olives, and optional mushrooms. Cook on low till Velvetta cubes have melted thouroughly. Stir often. Pour into large casserole, cover and bake at 350 degrees for 30 minutes or until heated thoroughly. Remove cover, prinkle chow mein noodles on top & heat another 10 minutes. This amount should serve 8-10 people.
I Split amount into two casseroles and freeze one for later.
Just thaw (or defrost in microwave) before putting into oven. Heat thoroughly with foil ontop at 350 degrees - add chowmein noodles and bake an additional 10 min.
